Celebrate Peanut Butter Month with this Delicious Recipe

It’s peanut butter month and that means that when you take your vehicle or RV from Jack Link’s Auto and RV Supercenter on the road, you should have some peanut butter recipes with you. Make something ahead of time for energy while you are driving or make something while you are camping in your RV.

Chocolate Peanut Butter Brownies

  • 4 ounces semisweet chocolate, chopped
  • 2 ½ sticks butter, room temperature
  • 1 cup creamy peanut butter
  • ½ cup light brown sugar, packed
  • 8 ounces cream cheese, room temperature
  • 5 large eggs, room temperature
  • 2 cups sugar
  • 1 tsp. Vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp. Salt
  • ½ cup confectioners’ sugar, sifted

Preheat the oven to 350 degrees Fahrenheit. Line a 13-inch by 9-inch pan with foil, then spray the foil with cooking spray.

Melt the chocolate and 2 sticks of butter in a small saucepan over low heat, stirring constantly, until the mixture is smooth. Pour the mixture into a large bowl and allow it to cool to room temperature.

Cream the peanut butter, brown sugar, cream cheese and ½ stick butter in a separate bowl. Beat in 1 egg.

Whisk the four eggs, sugar and vanilla in the bowl with the melted chocolate mixture until well mixed. Stir in the flour and salt. Pour the batter into the baking pan.

Spoon the peanut butter mixture over the top of the chocolate mixture. Swirl the mixtures together with a sharp knife.

Bake the brownies until about 50 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Cool the brownies in a pan on a wire rack.

Stir 1 to 2 teaspoons cold water into the confectioners’ sugar until the mixture to form a thick, smooth paste. Garnish the brownies with the icing.

Great American Pie Recipe

It’s Great American Pie month and that means you have a great excuse to make a pie. You can also use the pie to celebrate that new RV you just got from Link RV Direct of Minong, so be sure you have the ingredients for the best apple pie you’ve ever made.

Great American Apple Pie

  • 3 pounds hard, sweet apples, peeled, cored and sliced
  • 1 cup sugar, granulated
  • ½ cup light brown sugar
  • 2 tsp. Cinnamon
  • 1 tsp. Nutmeg
  • 1 tsp. Ground cloves
  • ½ tsp. Salt
  • 2 tbs. Cornstarch
  • 2 tbs. Cold water
  • Your favorite pie crust, homemade or frozen

Cook the apples, sugars, cinnamon, nutmeg, cloves and salt over medium heat, stirring constantly until the mixture starts to thicken. Mix the cornstarch with the water and add it to the apple mixture while stirring. Bring the mixture to a boil and then lower the heat to medium low. Cook for about 5 minutes. If the mixture still looks too thin, add another tablespoon of cornstarch and water mix and cook for a few minutes. Let the mixture cool. It will thicken more as it cools.

At this point, you can either freeze the mixture to use later or put the cooled mixture into the pie crust. Paint the top of the pie crust with egg wash (1 egg and a tablespoon of water, mixed well). Sprinkle the top with cinnamon and sugar. Cut 1-inch vent holes in the crust. Cover the edges of the crust with aluminum foil. Bake at 350 degrees Fahrenheit for 60 to 70 minutes. Remove the foil for the last 15 minutes.

Options: Substitute 4 cups of blueberries for the apples. Do not use any spices. Increase the white sugar to 2 cups and delete the brown sugar.

Substitute about 4 cups pitted cherries. Do not use any spices and increase the white sugar to 2 cups. Delete the brown sugar.
