032116_JLRV_PeanutButter

It’s peanut butter month and that means that when you take your vehicle or RV from Jack Link’s Auto and RV Supercenter on the road, you should have some peanut butter recipes with you. Make something ahead of time for energy while you are driving or make something while you are camping in your RV.

Chocolate Peanut Butter Brownies

Ingredients:

  • 4 ounces semisweet chocolate, chopped
  • 2 ½ sticks butter, room temperature
  • 1 cup creamy peanut butter
  • ½ cup light brown sugar, packed
  • 8 ounces cream cheese, room temperature
  • 5 large eggs, room temperature
  • 2 cups sugar
  • 1 tsp. Vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp. Salt
  • ½ cup confectioners’ sugar, sifted

Instruction:

Preheat the oven to 350 degrees Fahrenheit. Line a 13-inch by 9-inch pan with foil, then spray the foil with cooking spray.

Melt the chocolate and 2 sticks of butter in a small saucepan over low heat, stirring constantly, until the mixture is smooth. Pour the mixture into a large bowl and allow it to cool to room temperature.

Cream the peanut butter, brown sugar, cream cheese and ½ stick butter in a separate bowl. Beat in 1 egg.

Whisk the four eggs, sugar and vanilla in the bowl with the melted chocolate mixture until well mixed. Stir in the flour and salt. Pour the batter into the baking pan.

Spoon the peanut butter mixture over the top of the chocolate mixture. Swirl the mixtures together with a sharp knife.

Bake the brownies until about 50 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Cool the brownies in a pan on a wire rack.

Stir 1 to 2 teaspoons cold water into the confectioners’ sugar until the mixture to form a thick, smooth paste. Garnish the brownies with the icing.

RVing for Spring Break

030716_JLRV_RVSpringBreak

It’s almost time for spring break, and that means getting ready for vacation. Instead of planning an expensive trip with hotels, get the RV ready to enjoy some time with nature along with some time for visiting attractions, historical sites or even sightseeing in various cities and rural areas.

If you don’t have an RV yet, stop by Link RV Center of Rice Lake to walk through the many floor plans we have available; and if you do, give our service department a call to set up an appointment to de-winterize your RV and to have it checked thoroughly for the first trip of the season.

Choosing the Perfect RV

Whether you want a brand new RV or a pre-owned RV, you need to find a floor plan that suits your needs. If you have four children, you’ll want an RV that sleeps at least six people, so a bunkhouse model might be right. If you’re a couple with no kids, you’ll want something that affords you plenty of space for relaxation, so something with a front or rear living area would be ideal. You’ll find plenty of choices in our showroom, regardless of your situation.

Maintenance

Before you leave, it’s always best to have the RV checked out thoroughly to ensure all systems are working properly. Whether it’s the heat or air conditioning, the plumbing or the black tank flush, something not working could ruin your vacation. If you have a motorized RV, we’ll check out the engine, too.

Choosing the Right Place

Choose a favorite spot, try a new spot or create an itinerary if you want to visit several new areas. While one of the benefits of RVing is stopping when you want, it is a good idea to make reservations for those favorite spots that are known to fill up.

At the very least, if you prefer to wing it and can’t find a good campground when you decide to stop, in a pinch, you can always park overnight some of the big box store parking lots. Always get permission if you end up doing this; and be sure your tanks are emptied and that your fresh water tank is full. While that might not be what you want to do, if you have to do it for one night so that you can get to your favorite, it’s better than making a reservation for a spot that you arrive at too early in the day; or for a spot that you end up paying full price for when you’re only going to be there for a few hours.
